Below are the steps to freezing carrot cake:
Step 1: Allow to Cool
Once the carrot cake is baked, allow it to cool to room temperature. This will take a couple of hours to cool, so it should be placed on the countertop.
Avoid trying to freeze the cake when it’s hot or still warm. Doing so will cause condensation to form in the freezer bag. The moisture from the condensation will cause the cake to become soggy during freezing.
Step 2: Wrap Cake Base
Once the carrot cake is cooled, wrap the base in cling film. You can double wrap them for extra protection. Then place the wrapped cake base into the freezer bag. Make sure the bag is large enough to accommodate the cake.
After the cake is in the bag, press on gently to remove any excess air before sealing it tightly.

With the cream cheese topping, scoop them up and put them into the freezer bag. Then press on the bag to remove excess air and seal it tight.
